    Final day of our isolated tropical holiday has gifted us with the best beach weather of our trip, and my wife just booked her first dose of the vaccine. I’m choosing to look upon all of this as auspicious steps into 2021.

    Pretty pleased with my barbacoa. For taco fixins made some pickled red onions, pickled jalapeno/habeneros, roasted poblanos, guacamole...and had sour cream, goat cheese and a Belizean hot sauce to dollop and drip.

    Not too shabby, 2021, not too shabby. Going to tip toe real quiet into day 2, maybe watch a little Saxsquatch, try not to bother anyone. Just play it cool, ya' know.

    I agree!

    I ate black-eyed peas today, so, not quite the same amount of auspicious, but a positive nonetheless. I love black-eyed peas.
