    Trying my hand at a za'atar rubbed whole chicken this evening along with ALL the garlic mashed potatoes.

    And, yes, going to make my own za'atar spice but I don't have sumac and I'm not going out for just that.

    Speaking of garlic, one of my favorite things to do with it is roast several heads whole in the oven wrapped in foil w/ a bit of olive oil until soft. We put the results on just about anything, including:

    Homemade pizza, along with diced jalapeno peppers and pepperoni
    Steak, along with some compound butter
    Pressed into logs of goat cheese, then knifed on top of crackers
    As light additions to all manner of Italian pasta dishes

    Several heads just out of the oven will be going in some mashed potatoes this evening along with carmelized onions.

    You know, pretty darn good. I had to substitute and improvise on a few ingredients for the za'tar spice mix that I didn't have like the aforementioned sumac. So, not sure how authentic it was but we enjoyed it. Loaded the bottom of the pan with onions that soaked up all the drippings and put those on top of the garlic mashed potatoes. Pretty tasty stuff, thanks for asking!

    I use a chicklet style keyboard. Not the same click but a satisfying sound to me at least. Plus, the pet hair doesn't hang around in between the keys like it would on a normal keyboard.

    I brought a roll of bamboo "paper" towels to use around the office. They can be washed and re-used.


    I just haven't figured out how to get them back on the roll.
