    I do have a tortilla press and have been known to sling it but just going store bought with this batch.

    Nice. Yeah, tacos are easy to make good but hard to make transcendent --- one of the things that can do it is a fresh, warm, chewy tortilla. I would not sell the things that have come out of my press but I've hit a few doubles, maybe one triple.


    By the way, that segment reminded me of my abdication of all things Pace. I used to house that stuff as a kid and now, as an adult who knows better, I wish I could travel back in time, kick my own a**, and get the quest to find salsa and hot sauce nirvana started that much sooner.

    While I do have various and sundry plants growing in my yard(Bermuda grass and some weeds) I’m not sure I’ve spied any green leaf lettuce back there.

    They don’t fit through the grinder or into the casings, so 10-4 on that.

    Pork is seasoned and chilling, first coarse grind coming up. Not sure of “sausage-making music” but James McMurtry’s Choctaw Bingo just came up on the shuffle. Seems right.

    Wilson posted about going camping so likely won’t be around these parts for a bit. I think he might be the resident expert?
