Like custard, it had its last stand.

Turned out nicely, definitely need to sear to make it feel like a real meal. Super moist and tender. It does tend to look like a gelatinous cube when first removed from the bath.

    Nice!

We have this Cuisinart panini grill that we never use to make paninis. However - I can heat the top and bottom plates to 500 degrees and simultaneously sear both sides of steak at once. That's been my approach for preserving sous vide's temperature perfection while still delivering a terrific grill/broil sensibility.

I'm learning the art of the sear. Debating getting a cast iron skillet.

I still can't get my parents to buy a smartphone. They like the concept but are discouraged by the technology.

Turkey sammies at lunch. Playing it back for dinner. Carcass is going in a pot for stock tomorrow. Wife making turkey curry Sunday.

    Gobble gobble.

I missed out on those opportunities by going boneless turkey breast. Well the stock and soup ones. I'm not sure I'll have enough left over for turkey curry, but that is a holiday staple for me. I did have Kung Pao shrimp for lunch today to break up all the poultry.

I had one with sharp cheddar and Mayo, the other with cream cheese and candied jalapeņos. Not sure about ideal but I enjoyed them. Just on small finger food rolls.

Dark meat turkey curry tonight. Also made two quarters of turkey stock that I'm thinking about turning into a turkey poblano soup in the near future.
