Blame the NCAA and CBS/Turner, and their need for ratings. It's less likely that east coast fans would be so interested in west coast teams playing, especially when they haven't watched them all year due to the time difference. So they play to their expected audience. They always put what games they think the target audiences will watch in their prime time.
For me, the time difference means that Duke games starting at 7PM Eastern start at 4PM Pacific. Pre-pandemic, it was really hard to catch those games live. I always had to record them and avoid score updates until I watched.
