i heavily assume this is only for sports that are not covered by their tv contracts, or otherwise not broadcast.

According to a press release, it sounds like it's mostly, if not exclusively, football.

I wonder whether other P5 schools will eventually end up with their own streaming channels.

you'd have to assume so. texas had the right idea...why should lesser schools get revenue for people who want to watch texas?
