    Last Thanksgiving I prepared a spatchcocked turkey (https://cooking.nytimes.com/recipes/...t-roast-turkey). It was the best roast turkey I've ever had, as well as the fastest. Made a lot of broth from the carcass and used some for a most excellent turkey tetrazinni (four times as good as turkey zzini) a couple days later.

    I haven't baked a whole turkey in 26 years. Deep fry cajun style for t-day or boil smallish ones for making gumbo.

    This is what I do with the wild turkeys as even the breast meat on a big wild tom is pretty tough no matter how you cook it.

    Wild White Meatloaf

    8 pounds mixed meat total - Breasts from large wild turkey in my case were about 5 or 6 pounds I guessed. I added 3 pounds of cubed pork shoulder.
    2 cups bread crumbs
    2 cups milk
    5 eggs
    2 cups freshly grated Parmesan cheese
    2 cups finely grated mozzarella cheese
    1 cup minced fresh parsley leaves or 4 teaspoons dried parsley
    2 teaspoons minced garlic
    1 very large onion, minced
    2 large carrots, minced or grated
    4 teaspoons minced fresh sage leaves or 4 pinches ground sage
    Salt and freshly ground black pepper - I used about 20 cranks on pepper grinder and a couple teaspoons of salt
    slices of bacon to cover - usually about 3 per pan

    1. Heat the oven to 350°F.
    2. Grind meats together. If you have some saved fat from pork or beef add some in at this time if your pork is not very fatty.
    2. Mix together all the ingredients except the bacon. Shape the meat into a loaf in a baking pan; top with the bacon.
    3. Bake for 45 to 60 minutes. Use a thermometer and cook until internal temperature reaches 160°F.

    This came out as the whitest meatloaf I ever had and tasted outstanding. You should be able to get anyone to eat this, even if they usually won't eat what you shoot.

    Big Wayne THAT is some kind of cooking ^^^! We have plent of wild turkeys roaming around our place but I've usually only allowed my deer hunting friends to try for one turkey a year. I like seeing the turkeys wander. I loathe the deer and love seeing the cull increase.
    But you sir, if you promise to save some of that loaf for me, you can come hunt anytime.
    Nothing incites bodily violence quicker than a Duke fan turning in your direction and saying 'scoreboard.'

    Baked Turkey Breast Tenderloin with Garlic Herb Marinade

    Mrs. Cspan and I enjoyed this recipe last night - highly recommended.

    Once nice thing is that the marinade coats / sticks very well, so you don't need much, unlike some which only work when the meat is submerged in a large pool of it.

    Marinade has:

    Apple Cider Vinegar
    Brown Sugar
    Dijon Mustard
    Garlic Cloves
    Fresh Thyme
    Fresh Rosemary (we were out; it was still good)
    Sea Salt + Ground Pepper
    Extra-Virgin Olive Oil

    Turkey breast looks like it came from a Tom that did no fewer than 500 turkey push-ups every day.

    This sounds like turkey hunting. A hunter just sits against a tree, making interesting sounds until the turkeys come.
