    Ymm, Cakes

    If I'm gonna start a pie thread, I'm darn well gonna start a cake thread, too.

    I'm taking one of my wife's German Chocolate Cakes with me in the cooler to that dessert (sic) island; with pecans and coconut. And, if accfan found another bottle of Hardywood BBA Chocolate Cake imperial stout, I'm taking that, too. Guess I'm gonna need a larger fridge .

    I like many, many kinds of cake, but there are three that I bake myself from time to time.

    1. Carrot cake. - I count it as a vegetable. Cream cheese frosting is dairy.

    2. Fruit cocktail cake. - Mostly for the cooked coconut walnut frosting.

    3. Rum cake. - Baked in a tube pan, with a rum sauce drizzled over and a bit more rum poured down the center hole.

    I'm all-in on the German Chocolate cake (which isn't German Chocolate cake without the coconut and pecans). I hate baking, and my wife doesn't do cakes, so once a year on my birthday I buckle down and make one, because it's just so good. However, it absolutely requires a scoop of vanilla ice cream - French vanilla ice cream, if you can find it. It's the World War dessert, but by the end, there is much peace.

    This has become my favorite cake.

    Top 5 would be:
    1. Vanilla with Mascarpone Frosting & Raspberries
    2. Red Cake with the Mathews Frosting (not a cream cheese frosting)
    3. The Prospect's Carrot Cake (heart attack on a plate)
    4. Key Lime Pound Cake
    5. Spiced Egg Nog Cake - only with my leftover homemade egg nog.

    or Something baked by someone else

    Cheesecake for me! I don't do it very often though.

    I'll be making a Triple-Chocolate Cheesecake for Valentine's Day.

    My go-to is a mocha rum cake, baked in a bundt, tube, or kugelhopf pan.

    And I also do a lime cheeseCAKE with either cherries or fresh strawberries on top. Extra nummy!

    Angelfood with white frosting. Mom always made it for my birthday. Sad to think it's probably been about 40 years since I last had it.

    The seven minute style frosting?

    Since I love to bake, if you ever make it out this way, I'll bake one for you. Anything that brings back good memories of a mom is worthwhile.

    In my world, cream cheese frosting should only be on carrot cake.

    Red (velvet) cake should have the Mathews family frosting - basically make a roux, add sugar, and beat the h-e-double hockey sticks out of it. Not as sweet as typical frostings. Of course, the first time I had red cake many decades ago, it had this frosting so it is the original style in my mind.

    Carrot cake with cream cheese frosting is my #1.

    Red velvet cake with cream cheese frosting is also awesome, and sir, cream cheese frosting is entirely appropriate on both cakes.

    On another note, I am looking forward to having some King Cake on Tuesday. I make the gumbo and sazaracs, the girl makes the King Cake. It's pretty damn good if I do say so myself.

    I'd also go for a (large) slice of my wife's homemade 8-10 layer sour cream coconut cake.

    Carrot cake can certainly be delicious, but nothing complements cream cheese icing like my wife's hummingbird cake.
