    I just had a dinner of jambalaya with some of the green flakes mixed in.
    My wife likes the sweet heat ones even though she's not a spicy food fan. They're especially nice on pizza.

    I do not subscribe although thought about it. Just order when I am low, and you get frees shipping over a certain amount. This should last me a few months.

    Ordered my Hatch chiles today! Splitting a ten-pound box with a family member. Looks like they should be here next Thursday.

    Sandias (the next-to-hottest). They said this year’s crop was running mild, so I went pretty high. If it were only for me, I’d just get the hottest ones, but these will be going in household recipes.

    Way to go! I had about five pounds of those last year and they were excellent.

    Big Jim’s are mild but HUGE, great for chile relleños.

    I just strung up a dozen to air dry and stuck another dozen in the oven to roast/dry overnight. Will probably stick some in the Big Green Egg soon and I might try my hand at making some hot sauce. Having a themed dinner soon with my uncle, with whom I split the box.

    I’m actually planning to keep the skin on these and chop/soak them as needed when I cook with them, to keep that yummy toasty flavor from the outside.
