Texas caviar is a black-eyed pea type salsa/dip that usually has tomato, avocado, cilantro, etc in a vinaigrette.
They do caviar at Carolina? I always thought it was just cheese and wine . . . .

Jimmy Buffet's sister has LA* caviar on the menu at her restaurant. I'm guessing it is the same thing - black eyed peas, red/green/yellow bell peppers, cherry tomatoes, balsamic vinegar, and sugar.
*LA = Lower Alabama
