    Carolina Caviar

    Carolina caviar is a common food across the south. But what is it? Guess the answer, but try not to Google it on your honor, just guess please.

    Is it the same as red neck caviar and cowboy caviar? Probably a variation on those?

    Texas caviar is a black-eyed pea type salsa/dip that usually has tomato, avocado, cilantro, etc in a vinaigrette.

    Same thing. I've always called it Texas Caviar.

    Jimmy Buffet's sister has LA* caviar on the menu at her restaurant. I'm guessing it is the same thing - black eyed peas, red/green/yellow bell peppers, cherry tomatoes, balsamic vinegar, and sugar.

    *LA = Lower Alabama

    Yes, this is Carolina Caviar.

    That said, there is a caviar farm in eastern NC...somewhere in the "down east" area. They've been raising the sturgeon for several years, I think they started producing the product last year.

    No I can't imagine that...and I can imagine some pretty gross stuff. Like that time I had Ouzo and squid with my cousin in London...the mixture proved shall we say, rather toxic. Nuff said.
