He is played by actor Jonathan Goldsmith, whose career was pretty much a guest spot on every iconic 80s drama until this commercial gig for Dos Equis.
He was on McGuyver, Dallas, Murder She Wrote, Highway to Heaven, Magnum PI, Knight Rider, Knotts Landing, St. Elsewhere, Dynasty, Trapper John MD... the list is endless.

Wonderful line of ads. The sell is so subtle it inevitably appeals to jaded cynical Gen X-ers and younger. He doesn't even drink beer all that often, he's too cool for that! The thing that cracks me up is that he starts his famous line with "I don't always drink beer, but when I do..."
