Metallica's "Whiskey in the Jar"
Cake's "I Will Survive"
I agree with Whiskey in the Jar! My boys in Metallica did really well on the whole Garage, Inc. album. Also to be noted is their cover of Bob Seger's "Turn the Page."
What is really funny is to listen to the original Irish folk song "Whiskey in the Jar," then its rendition by Thin Lizzy, then Metallica's cover of Thin Lizzy. It is like watching the song do a mega-cycle of HGH and steroids.

Personally, I think that Girlschool's version of Kiss' Do You Love Me is better than the original.
I also prefer Manfred Mann's version of Blinded By The Light to Springsteen's original.
But, if we're sticking to metal:
Great White's version of Ian Hunter's Once Bitten, Twice Shy is very good. They also did a decent cover (I think I like it better than the original) of The Who's Substitute. GnR did decent versions of Knockin' On Heaven's Door and Live and Let Die. L.A. Guns did decent version of Def Leppard's Bringin' on the Heartbreak as well as of Led Zeppelin's Custard Pie.
And, of course, Nazareth's version of Joni Mitchell's This Flight Tonight is an absolute classic.
Speaking of classics, and if you want to include Lynyrd Skynyrd in this category, they did a brilliant version of J.J. Cale's Call Me the Breeze.

Lita Ford did a decent cover of Alice Cooper's Only Women Bleed.
Poison's version of Your Momma Don't Dance was alright.
Black Sabbath did a great version of Deep Purple's Smoke on the Water when Ian Gillan was the Sabbath singer but I'm not sure if that shoulod count since he was also the Deep Purple singer.
Quiet Riot's covers of Slade songs were always better than the originals.
And, although it isn't a cover song, listen to The London Quireboys song Roses and Rings and you'll be convinced you're hearing Rod Stewart when he was with The Faces. The similarity is uncanny.
I liked Lynyrd Skynyrd's version of Crossroads on the One More From the Road live album.

For pure shock value, Garth Brooks covering Kiss's "Hard Luck Woman" had me reaching for the linear notes, b/c I didn't believe those two were on the same line. Bosstones did "Detroit Rock City" too which was the only other memorable track on that album.
Can you call Run DMC's Walk This Way a cover? If so, it's up there in my book.
Tesla's "Signs" I think is also better than the original.

Couple years ago I bought a 2-CD album of Pink Floyd covers and a reggae cover of the Beatles. About 1/3 of them I really liked, but most of it was garbage.
