Jane's Addiction cover of the Grateful Dead's "Ripple". A lot of Deadhead's hated it, but they are my two favorite bands, it was a nice match. The album it's on, "Deadicated", has a bunch of interesting covers of Dead songs from various artists.

Glen Hanspard (the dude that won the Oscar from Once) did an awesome cover of Cry Me a River... seriously... check it out on iTunes. When Timberlake sang it, I never paid attention to the words and just ignored it. It's really a pretty angry song...

Did you ever get a chance to hear any of the Grey Album? Danger Mouse (more recently recognized as the dj in Gnarls Barkely) mixed Jay Z's Black Album over the Beatles White Album. Technically not a cover, but superb hip-hop. Too bad EMI went ape poo over the whole thing.
